Deep Chocolate Brownies
Makes 12 brownies
1 stick unsalted butter
1 1/2 cups semi-sweet chocolate chips
1 1/2 cups granulated sugar
1/4 cup brown sugar
1 tablespoon canola oil
1 teaspoon pure vanilla extract
4 extra large eggs
3/4 cup all purpose flour
2 tablespoons dark cocoa powder
1 tablespoon instant espresso powder
1 1/2 teaspoons baking powder
1 teaspoon kosher salt
Preheat the oven to 350 degrees F. Butter and flour the inside of a 9” x 13” baking pan. Set aside.
Melt the butter and chocolate in a heatproof bowl set over a pot of simmering water. Whisk to ensure it’s fully smooth then allow to slightly cool.
Meanwhile, in a large bowl mox together the granulated and brown sugar, vanilla extract, and eggs. Use a rubber spatula to thoroughly mix in the flour, cocoa powder, espresso powder, baking powder, and kosher salt. Combine until there are no lumps, but don’t overmix.
Pour the batter into the prepared baking pan and bake for 30-35 minutes until a toothpick comes out clean. Allow to cool before serving.
