STEAMED CLAMS WITH BUTTERY BREADCRUMBS
To be honest, this is more of a summer snack than it is a whole meal. You could cook this in larger quantities and serve it with a great salad and some corn on the cob - yum!
Serves 2
6 slices white bread, crusts removed
3 tablespoons unsalted butter
1 teaspoon minced garlic
1 tablespoon minced parsley
1 tablespoon minced basil
1 teaspoon kosher salt
1/2 teaspoon freshly cracked black pepper
1/4 teaspoon crushed red pepper flakes
1 1/2 pound clams, scrubbed clean
1/4 cup dry white wine
Place the bread in the bowl of a food processor fitted with a steel blade. Pulse until the bread resembles breadcrumbs. Set aside.
Melt the butter over medium-high heat and add the garlic. Sauté for 30 second then add the bread crumbs, parsley, salt, pepper and red pepper flakes. Toast the bread in the butter for about 3-5 minutes until golden brown. Remove the mixture to a mixing bowl and wipe the pan clean with a paper towel.
Heat the pan over medium-high heat for 2-3 minutes then place the clams in the pan. Pour in the wine and cover with a tight fitting lid. Steam the clams for about 8-10 minutes, then remove the lid and cover the clams with the breadcrumbs. Serve hot.
