Craving Comfort

Today feels like a delicate day to send out a newsletter. September 11th is, of course, a day of remembrance, and after last night’s debate, I think we could all use a bit of a break. No matter where you fall on the political spectrum, we all share a common need for comfort right now.

For me, comfort begins at home—my husband and our puppy make any where I am feel like home. And right behind them? Cozy, stick-to-your-ribs food. When I’m feeling overwhelmed or uncertain about the future, there’s nothing better than curling up under my weighted blanket, putting on a silly TV show, and hammering down a slightly-too-big bowl of pasta. So I thought today would be a good time to share a few of my go-to comfort recipes for when life feels a bit too stressful.

Whether you’re sharing a meal with loved ones or just taking a quiet moment to yourself, I hope you can find gratitude for all that you have. And in the words of my Queen, Ina Garten, “You can be miserable before you eat a cookie and you can be miserable after you eat a cookie, but you can’t be miserable while you’re eating a cookie.” So today, forget about the calories, the worries, and whatever’s on your mind, and enjoy the cookie—or maybe two...

Nothing makes me happier than pasta - though my waist size may not be so happy about it… I love with this combination of silky tomato sauce, spicy sausage and peppery arugula. You could use spaghetti or bucatini, but I prefer a pasta with a hollow center that catches all the delicious sauce. Rigatoni is my personal favorite for this dish!

Meat eaters: please don’t come at me over this recipe! Growing up, my mom made a killer meatloaf, and even though I don’t eat meat anymore, I still crave that comforting meal. So, I had to reinvent it with a vegetarian twist. Trust me, if you give this a try, you’ll be amazed at how delicious it is!

Is there anything more comforting than mac and cheese? I’d be hard-pressed to find it. This is my go-to recipe when I’m craving something indulgent. If you’re looking to mix things up, use this as your base and add any flavors you love—it’s incredibly versatile and always delicious!

Okay, I know I mentioned cookies earlier, but brownies deserve their moment too, right? These are irresistibly fudgy and absolutely delicious! Want to take it up a notch? Warm them up in the microwave for a few seconds and turn them into a hot fudge sundae. Trust me, that'll do it!
